Apple rings dipped in pancake batter is one of my favorite breakfasts that my Mama makes. It’s the perfect pairing of both pancakes and fruit… where there is more fruit that pancakes. Just enough to justify the healthiness of eating pancakes, in case you need that.
It’s a super fast and easy weekend breakfast. You start by peeling the apples.

You slice the apples. Not too thin, and not too thick. About the width of a regular pancake.
Cut out the center core from each slice to create a ring.

Next your prepare your favorite pancake batter (it can be from scratch or from a box).
Add some cinnamon.

Dip the apple rings into the batter, and place them on a hot pan with a little bit of olive oil on it.

Fry on the pan until both sides are golden and crispy.
Sprinkle with some powdered sugar (or some Trader Joe’s sugar/cinnamon grinder).
Dip into maple syrup and enjoy!
This is the perfect proportion of apple vs pancake.

How have I NEVER heard of this before??? That seriously looks like the most delicious breakfast and – you’re right – totally healthy! Now I’m trying to think what other kinds of fruit you could do this with too – I bet bananas would be amazing!
that’s what i was trying to think too! but with apples or bananas its just strawberry pancakes though.. still yummy but they’re not as big as apples. maybe pineapple? or is that weird? haha

P.S: I’m pretty sure you can call these things fritters.
They get softer, but still have some crunch to them. They don’t get mushy. Tho if you wanted them real soft I’m sure you could just keep them on longer.
