I am enjoying the cooler weather we have had recently. However, has anyone noticed that cooler weather also brings on the need for more comfort food and an increased craving for baked goods?

I have been working on expanding my homemade soup repertoire, in the hopes of balancing out my baking, and have found a new favorite.
This soup recipe is originally from Hungry Girl, but it was first brought to my attention by Shanna!
It is the perfect soup for fall. First of all, it is fast and easy. The pumpkin gives it a healthy, creamy fall flavor, and the salsa spices it up giving it a Mexican food vibe. This caused me to instantly want to pair the soup up with some tortilla chips.

Let’s face it, I try to incorporate tortilla chips into as many dinners as possible… yummy.
Sassy Salsa Pumpkin Soup
from Hungry Girl
(Serves 4 - calories: 162.5, fat: 0.75g, sodium: 1128mg, carbs: 13, fiber: 12g, sugars: 6.5g, protein: 10g)
Ingredients:
- Non-stick cooking spray
1 tbsp minced garlic- 1 tbsp chili powder
- 1/2 tsp cumin
- 4 cups broth (chicken or vegetable)
- 15 oz. can pure pumpkin
- 1 can black beans, drained and rinsed
- 1 cup corn
- 3/4 cup salsa (this is where you can add or reduce the spiciness)
- Optional toppings: shredded cheese and sour cream
Directions:
Spray pot with non-stick cooking spray and heat pan on medium. - Add garlic, chili powder and cumin, and stir for one minute.
- Add broth to the spices, and bring to a simmer.
- Add pumpkin and mix well.
- Add the remaining ingredients and bring soup to a boil.
- Reduce heat and simmer for 10 minutes. This soup can be served with a sprinkle of cheese and a little sour cream on top.

I actually made it when he wasn’t around, and by the time he was, it was basically gone! Worst case if he hates it, box it up and take it to work for lunch or freeze it! It doesn’t make that much.
I love pumpkin but don’t know about this soup recipe! Now that I’ve seen it on two blogs I trust, I might give it a shot!
Yeah it sounds weird, but I was very pleasantly suprised by the unique gourmet taste of it!

I’m starting to crave soup now…which I think I’ll have to get my fix with some Pho! I love their soup bowls!

Ooo now I’m definitely going to try and make this soup!! I crave so many different foods now that it’s fall…I’m all about warm comforting dishes like casseroles, chili’s, and of course, pumpkin!

I totally crave baked goods in the fall! I can’t wait to make pie for Thankgiving and my Mom’s homemade caramel rolls soon and more loaves of amazing pumpkin bread! I usually rarely crave baked goods unless its in the fall and around the holidays!!!

Yum! This looks great, thanks for sharing! I love soup in the fall, but I usually end up just using my left over veggies from the week and not following a recipe. Adding pumpkin definitely sounds like it might be a good thickener for other soups too!
That’s a good idea, using leftover veggies before they spoil by making a random soup… need to get into doing that!
When it comes to soup, I’m really bad about recipes.
I usually tend to pull out the crock pot and keep throwing things in until I’m satisfied…
Maybe not the most organized method, but it works!
I tried that for the first time today, I threw really random stuff into my crockpot and am hoping a soup comes of it… I know the crock pot is magical and can do no wrong, but I’m nervous and curious to see what comes of my creation!
